Page 2, Welcome aboard. The rat in uniform greets passengers at an aircraft door, with palm trees and a Mediterranean harbour behind. A letter from Jose, the founder: fifteen years as cabin crew for Air New Zealand, where the crew called him Super Rat; a groomed rat seen in a London shop window; then Mallorca, where he stayed. Today's service has two shelves: four sea salts made by hand in small batches, and four hot sauces pictured as artist's impressions and not released. Also on the page: the contents list, today's crew (Jose, Laurenz and the Rat) and an announcement from the flight deck about keeping a glass of milk nearby.

Page 4, The trolley, items 01 to 04, four sea salts made by hand in small batches in Mallorca. 01 Lemongrass, sea salt with Thai lemongrass, net 45 g: sharp citrus, then a soft floral lift; good on grilled fish and prawns, rice and noodles, roast chicken. 02 Chilli, sea salt with chilli, garlic and kaffir lime leaves, net 45 g: savoury, then a slow warm heat; good on eggs, fries and roast potatoes, steak. Each tube is drawn beside its ingredients, with a crew tip. A panel shows how to hold a tube in four steps.

Page 5, the trolley continued. 03 Lemon & Rosemary, sea salt with lemon peel and rosemary, net 55 g: bright, then resinous and herby; good on roast potatoes, lamb, focaccia and olive oil. 04 Orange & Chilli, sea salt with orange peel and chilli, net 45 g: sweet and bright, then a slow chilli warmth; good on duck and pork, dark chocolate, fennel salads. A note on the orange: Orange & Chilli took seat 04 and the original Orange left the range, so there are still four salts. Salt, by the numbers: no exclamation marks in the magazine, four sea salts in the same slim glass tube.

Page 6, The Rat Pack: four hot sauces drawn as four rats in a police line-up, holding boards that read Street Rat, Island Bite, Back Alley and Clean Getaway, under a red “Not released” stamp. The text says the bottles are artist's impressions (bottle, label and size not final) and that none is released or for sale, with no date and no price. A mock charge sheet for each sauce, with a heat rating. A box for transfer passengers points to the Chilli sea salt on page 4 as the closest thing available now.

Page 7, the Rat Pack, window seats, not released, heat 3 and 4. 01 Street Rat, red chilli: the rat at a café terrace table with fried eggs, while a waiter, two pigeons and a lady at the next table look on. Good on fried eggs, roast potatoes and pizza crusts; paired with the 02 Chilli salt. 02 Island Bite, chilli and habanero, fruity then properly hot: the rat gives the safety demonstration while passengers, steam from their ears, reach for milk. Good on grilled chicken, pork, rice and beans; paired with the 04 Orange & Chilli salt. Each bottle is labelled as an artist's impression, bottle, label and size not final.

Page 8, the Rat Pack, aisle seats, not released, heat 4 and 2. 03 Back Alley, chilli and garlic: on a night flight, while the crew sleep, a garlic bulb goes into the pot. Good on stews, fried rice and a late-night cheese toastie; paired with the 03 Lemon & Rosemary salt. 04 Clean Getaway, chilli and lemongrass, the mildest of the four: a getaway down the evacuation slide to a waiting car. Good on grilled fish, noodle soup and prawns; paired with the 01 Lemongrass salt. Each bottle is labelled as an artist's impression, bottle, label and size not final.

Page 9, Turbulence is expected. In the cockpit the rat captain sips an espresso while the first officer, sweating, drinks milk; the dial is marked with chillies. The turbulence chart ranks all eight products by heat out of five: the Lemongrass and Lemon & Rosemary salts in smooth air, the Chilli and Orange & Chilli salts warm; the sauces from Clean Getaway (light chop) to Island Bite and Back Alley (strong). Nothing is rated five, and sauce heat is forecast only, as the sauces are not released. Also: a three-question quiz, Which rat are you, and four salt-and-sauce pairings.

Page 10, Destination Mallorca: arrive hungry. An illustration of Palma cathedral above the sea, almond trees in blossom in the foreground, a sailing boat and a plane overhead. A short guide to the island where the salt is made: the light, the almond blossom around February, the Mercat de l'Olivar in Palma and the Wednesday market in Sineu, what to pack for the Serra de Tramuntana, a few phrases in Catalan and Spanish, and what to eat: pa amb oli, tumbet, sobrassada and ensaïmada.

Page 11, In-flight entertainment: a short and unreliable history of salt, told in five round vignettes, from Roman soldiers said to be paid in salt, to salt on sailing ships, Jose's fifteen years as cabin crew, the rat in a London shop window, and Mallorca now, where the salt is made by hand in small batches. Below it, a word search: find the twelve words, among them Lemongrass, Rosemary, Garlic, Street Rat, Island Bite, Back Alley, Mallorca and Super Rat.

Back cover, Before you disembark.
